Our Story
The Borough Cheese Company was founded by Dominic Coyte and Jason Hinds in 2003. Both founders had honed their skills at Neal’s Yard Dairy, one of London’s pioneering cheesemongers, and shared a vision to source cheeses with a deeper connection to producers. Their journey began with a focus on Comté, making regular trips to Marcel Petite in France to select wheels of cheese that matched their exacting flavour standards.
As the business grew, so did their network of relationships with farmers, affineurs, and artisan producers across Europe. Their ethos remained the same: to highlight the very best cheeses, produced using time-honoured methods, sustainable farming practices, and a deep respect for the land.
Even today, over 20 years later, you can still find Dom himself serving customers at Borough Market, continuing the tradition of knowledge-sharing and personal connection. Alongside Jason and Alex Hinds, who leads finance and operations, the team has expanded to include a dedicated group of cheesemongers who embody the company’s passion for quality.
